Sébastien Mahuet

Sébastien MAHUET is master of his cuisine. He is creative and generous and knows how to get the best out of the produce from local markets.

From my experience with top chefs, I have learnt how to work with local ingredients, to appreciate sun-kissed vegetables and combinations of sweet and salted.

I put all of that into a cuisine which has the flavours and colours of the South of France’

This young 31-year-old Chef is passionate about top-quality ingredients, and served his time at the best restaurants in the region before bringing his talents to La Réserve de Nice.

His professional career began in Grasse at La Bastide Saint-Antoine with Jacques Chibois. He then moved to Monaco to the Métropole Palace, and then to the Château de la Chèvre d’Or in Eze Village.

In Nice he specialised in fish dishes at Les Viviers Bretons, and then went on to explore the world of sweet and salted at Roquebrune Cap-Martin with his friend Olivier Streiff.

This rich and enriching experience is what he brings to the kitchens at La Réserve

Une cuisine inventive, moderne au service des produits

He always delights in offering his guests his mouth-watering dishes with exquisite flavours. His is a cuisine that gives pride of place to local fish and to fresh vegetables. These are central to his dishes and the Chef likes ‘to prepare them with great delicacy’. With each new season, there are different and exciting vegetables to work with: with their dazzling colours and subtle flavours, the South is ever present.

He will introduce you to ‘denti’ fish and line-caught sea bass and let you rediscover Réserve-style bouillabaisse as a tribute to Marseille, a sister town on the Mediterranean.

But Nice remains Nice with its assertive personality and Italian influence and Sébastien Mahuet doesn’t hesitate to push at its boundaries to explore new culinary horizons.

Every week he introduces new dishes through his ‘set lunch menus’ (€30) and every month he creates a new à la carte menu. Offering the opportunity to discover or rediscover new flavours.

From his attractive and tasty quick lunches to his gastronomic dinners, enjoy the experience of ‘custom-made’ dishes.
